Preparation

1.  Wash mung beans and soak in water for 1 hour. Cook in rice cooker with enough water to cover beans or steam mung bean for 15 minutes or until cooked.

2.  Dissolve sugar in coconut milk and water on low heat. Let cool to room temperature.

3.  Mix tapioca starch, rice flour, salt, and coconut mixture. Stir until smooth. Remove 1 1/2 cup of mixture and place in a separate bowl. Add pandan extract to bigger portion.

4.  Blend mung beans and the 1 1/2 cup of mixture in a blender until smooth.

5.  Grease cake pan or mold with oil, add a layer of green batter, and steam for 3-4 minutes or until slightly set. Add a layer of yellow batter on top of green layer and continue steaming until it starts to set. Repeat until all batter is used. Steam last layer until set.
