Spicy stir fried chicken with a curry sauce.


Ingredients

  • 3 Thai chilies, chopped
  • 1/2 lb chicken breast, sliced thin
  • 1 tablespoon peanut or vegetable oil
  • 1 tablespoon Thai red curry paste
  • 3-4 kaffir lime leaves
  • 1/2 cup coconut milk
  • 2 teaspoons sugar
  • 1 tablespoon fish sauce
1.  Heat up oil in wok on medium-high. Add in curry paste. Stir and add in chicken. Cook for about 3 minutes or until chicken is done depending on how thinly sliced chicken is. Stir in lime leaves, chilies, and coconut milk. Stir in sugar and fish sauce and keep on heat for another 30 seconds or so. Serve with rice.
