These are my father’s take on Japanese edamame. He makes these with Indian spices and it’s really tasty.

Ingredients

  • 2 tablespoons of peeled, sliced ginger
  • 10 cloves garlic, crushed
  • 4 stalks green onions, chopped
  • 4-5 fresh chili peppers, chopped
  • 1 bunch of cilantro, chopped
  • 1 yellow onion, coarsely chopped
  • 1 tablespoon oil
  • 10 cloves
  • 4 cardamom, crushed
  • 8 curry leaves
  • 1 teaspoon salt (or to taste)
  • 16 oz frozen, shelled edamame
  • 1 ½ cups water

Preparation

1. In a blender, add ginger, garlic, green onions, chili peppers, and yellow onion. Coarsely blend for a few seconds.

2. Heat oil in a pot. Add cloves, cardamom, and curry leaves. Stir until leaves are crispy. Add mixture from blender. Add salt to taste.

3. Cook for 5-7 minutes. Add edamame, 1/2 cup water, and cover pot with lid. Simmer for another 10-15 minutes. Periodically, add another 1/2 cup water to keep liquid consistent, but no more than 1.5 cups total. Serve with rice.
