I learned this recipe from a friend. She doesn’t have a name for it and I didn’t have any luck coming up with a name for it either so I enlisted my friend’s and coworker’s help and we came up with “Phamtastic Rolls” (pun on my last name Pham). Now the most difficult part of this recipe is over…… This recipe is so quick and easy to make and versatile. It can be served as an appetizer or for dinner. I love it because it’s my quick and inexpensive fix when I’m craving sushi.

  • 2 cups sushi rice (or plain white rice)
  • 8 oz fresh or canned grilled eel
  • 8 oz imitation crab meat
  • 1 cup mayo
  • 1 cup sour cream
  • 1 bottle of rice seasoning (any flavor of your choosing)
  • Seaweed (individual/pre-cut or large sheets)


1.  Cook 2 cups of sushi rice. Preheat oven to 350 degrees.

2.  In a mixing container, add eel and imitation crab meat and mash with potato masher (or place in food processor) until broken down but still substantial. Add mayo and sour cream, and mix all ingredients well.

3.  Scoop cooked rice into a casserole dish or disposable aluminum container, and mix in 1/3 of rice seasoning.

4.  Pack in rice so you evenly cover the bottom of the pan, and sprinkle remaining rice seasoning on top. Spread the eel/crab mixture on top of rice, covering entire surface.

5.  Bake for approximately 20-30 minutes or until golden brown. Serve with seaweed or enjoy without. If serving with seaweed, scoop spoonful(s) of rice mixture onto seaweed and wrap.
