This is a very simple Thai/Lao style grilled chicken. Just marinate, and bake or grill, to achieve this sweet and savory chicken.

Ingredients

  • 1 half a chicken
  • 2 tablespoons lemon grass, minced
  • 2 tablespoons ginger, minced
  • 2 tablespoons sugar
  • 2 tablespoons curry powder
  • 2 tablespoons soy sauce

Preparation

1.  Mix together ingredients and rub over chicken. Marinate in refrigerator for at least 6 hours.

2.  Roast in oven at 400°F for an hour skin side up. You can also grill the chicken instead.
