Coconut and peanut, they all come together.


Ingredients

  • 1 cup all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 egg
  • 1 cup coconut milk
  • 1/4 cup all purpose flour
  • 2 cups coconut flakes
  • 1 quart oil
  • 24 shrimp

  • 1 tablespoon sugar
  • 1/4 cup water
  • 1/4 cup peanut butter
  • 1/4 cup hoisin sauce
  • 2 tablespoon sriracha

Preparation

1.  In a bowl, combine flour, salt, baking powder, egg, and coconut milk. Whisk smooth, cover and set aside for 20 minutes to an hour.

2.  In a separate bowl combine 1/4 cup flour and coconut flakes and mix.

3.  Hold shrimps by tail and dip in batter then roll in coconut flakes.

4.  Deep fry in 300°F-325°F oil until golden brown. Drain on paper towl. Serve with peanut sauce.

Peanut Sauce
1.  Combine sugar, water, and peanut butter in pot saucepan. Stir together and heat to a simmer until thick, add in hoisin sauce and sriracha then stir to combine.
