Ingredients

  • 1 pound chicken breast, sliced 1/8 inch thin
  • 4-6 spur chilies, halved
  • 7-8 slices galangal
  • 1 lemon grass, cut into 1 inch long pieces
  • 6-7 kaffir lime leaves
  • 1 can (14 fl oz) coconut milk
  • 1/4 cup lime juice
  • 3 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 cup chicken broth

Preparation

1.  In a pot on medium-high, add in chilies, galangal, lemon grass, lime leaves, and coconut milk and let it boil. Stir in chicken and cook for 2 minutes. Stir in lime juice, fish sauce, sugar, and chicken broth. Cook for 10-12 minutes, until chicken is done. Serve hot.
