Bitter Melon & Eggs (Mienh)
This is my favorite Mienh dish. I make this when bitter melon is in season. To lessen the bitterness, you’ll want to squeeze the juice out of the bitter melon. The egg helps to balance the bitterness too.Bitter Melon & Eggs (Mienh),
1. Peel the outer, green layer of bitter melon, and dispose remaining seeds and core. Add salt to melon peels.
Optional step: To reduce the bitterness of the melon, squeeze and dispose of juice.
2. On medium-high heat, add vegetable oil to frying pan.
3. When pan is heated, add bitter melon and stir for 1-2 minutes. Add eggs. Continue stirring until bitter melon is soft and tender, not yet fully browned.
